Today’s post is all about easy-to-make, healthy, grab-n-go snacks that pack a nutritional punch to keep you going. 🙂 I constantly make Energy Bites for quick snacks to stash in my bag and this has been my favourite recipe as of late! Mindfully Miranda’s Pumpkin Flax Granola Bites
- 1 cup of Organic Gluten Free Rolled Oats
- 2/3 cups of Nature’s Path Organic Pumpkin Flax Granola
- 1/2 cup of Natural 100% Peanut, Almond, or Cashew Butter
- 1/2 cup of Ground Flax Seeds
- 1/4 cup of Pure Maple Syrup
- 2 Tablespoons of Chia Seeds
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon vanilla extract
** Start by either microwaving or using the stove to warm your peanut butter, vanilla and maple syrup, as this will create a runnier consistency needed to make the balls stick.
*** In a large bowl, add your warmed nut butter and syrup to the rest of the ingredients. Stir well. Roll into balls and store in fridge.
Why do I love these ingredients?
Chia and Flax Seeds: Rich source of both soluble and insoluble fiber, plant-based protein, magnesium, and healthy Omega-3 Fatty Acids.
Granola: Made with organic whole grains, nuts and seeds, it is a delicious, crunchy addition to these bliss balls.
Nut Butter: Healthy plant-based fat, good source of protein.
Oats: Good source of healthy carbohydrates which helps to reduce blood sugar and cholesterol as the ample fiber slows down it’s metabolizing process. Also delivers a significant amount of protein.
Cinnamon: Known for it’s positive effects on lowering blood sugar and cholestrol levels, as well as increasing heart health and immune function.
