Pumpkin Power Bliss Balls

Hey lovebugs and Happy New Year!! I wish you an abundant new year filled with happiness, health and your loved ones.

Today I wanted to share with you some tasty little bliss balls that I made on the fly last night because they were too good not to share! They are vegan, can be made gluten free and are delicious!

Recipe:

  • 1/4 c. plus 2 T. of rolled oats
  • 1/4 c. nut butter: 2 T. each of peanut butter and tahini
  • 1/4 c. pumpkin seeds
  • 1 T. golden flax seeds
  • 1-2 T. pure maple syrup
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. cinnamon

Method:

  1. Combine all of the ingredients together in a large bowl. Once fully incorporated, spoon into tablespoon sized balls, and bind them together with your hands. Place them on a parchment lined plate and store in the fridge.

** I love these guys for the protein packed nut butters (& tahini) and the healthy fats they provide, the fiber from the oats, the tinge of sweetness (& trace minerals) from the maple syrup, and the antioxidants and heart-healthy benefits from the cinnamon.
